Vegan Pumpkin Pie Ice Cream


2 1/2 cups coconut milk
3/4 pumpkin
3/4 sugar
1/2 ts cinnamon
1/4 ts ginger
1/2 ts nutmeg
1/4 ts cloves
1 ts vanilla
2 ts rum
1 graham cracker crumbled
1/4 cup crystallized ginger


Mix all ingredients except graham cracker & ginger in your Cuisinart blender. Refrigerate for 2 hr or overnight. Place in your Cuisinart ice cream maker. Add graham cracker & ginger the last 5 minute of churning time. Now enjoy pumpkin pie in a healthier frozen way.
