Biscuit Topped Berry Compote

A warm, homey dessert that uses up any berries or cherries you have on hand."


4-5 cups of fresh berries or pitted cherries of your choice
corn starch
ground cinnamon
your favorite biscuit recipe


In an oven-safe dutch oven, simmer the berries with a cup of water. Add more water if the berries aren't juicy. Sprinkle in 2-3 tablespoons of sugar, a teaspoon of cinnamon and a tablespoon of corn starch to the simmering berries. Preheat the oven to 400. Prepare your favorite biscuit recipe (bisQuik works fine). Once the berries have softened and the juices have thickened, drop the biscuit batter in large spoonfuls over the top of the berries in the dutch oven. Sprinkle a tablespoon of sugar over the biscuit batter. Place the berries and biscuits in the oven until the biscuits are browned on top. Serve warm with vanilla ice cream.
