Homemade Thin Mints

This is my version of the Girl Scout Thin Mints - Enjoy!!!
This is my version of the Girl Scout Thin Mints with REAL mint. I came up with this and everyone that tries them say they are way better than the girl scouts! I have impressed lots of people with this cookie, they look like they are professionally made. You will see why. From my family to yours this is a sure winner!!!!"


1/2 Cup of butter, softened
1/2 cup of sugar
1 egg
1/2 tsp vanilla extract
1-1/2 cups of all-purpose flour
1-1/2 tsp of bake powder
1/2 tsp salt
4 - 5 tbls of milk
1 - cup fresh mint, finely copped with your Cuisine Art Food Processor
16 oz (1 lbs.) of Chocolate Candy Coating


In your food processor bowl, cream butter and sugar. Then add in egg and vanilla and process until creamy. Combine dry ingredients add to creamed mixture add milk a little at a time to check consistency. Stir in mint.

Shape into two 9 inch rolls; wrap separetley in plastic wrap. Chill until firm (approx. 1 hour).

Unwrap firm dough and cut into thin slices. Bake at 350 for 10-12 minutes or until edges are slightly golden. Let cool.

In a microwave, melt candy coating until smooth (1 - 2 minutes depending on your microwave) and stir. Dip each cookie top and get a spoon to dip bottom of cookie into chocolate coating. Place on waxed paper until hardened.
