Quatre Épice Cookies

This traditional French spice blend gives these cookies a nice kick.

Ingredients

2½ cups unbleached, all purpose flour ½ teaspoon baking soda ½ teaspoon table salt ¼ teaspoon ground cinnamon ⅛ teaspoon ground cloves ⅛ teaspoon ground nutmeg ⅛ teaspoon ground ginger ⅛ teaspoon freshly ground black pepper ½ cup unsalted butter, melted and cooled ½ cup granulated sugar ¼ cup packed light brown sugar 1 teaspoon pure vanilla extract 2 large eggs

Instructions

Preheat oven to 350°F. Put the flour, baking soda, salt and spices into a small mixing bowl. Whisk to combine; reserve. In a large mixing bowl, combine the butter and sugars. Using a Cuisinart® Hand or Stand Mixer fitted with the mixing beaters/paddle, mix until light and fluffy. Add the vanilla and then the eggs, one at a time, until completely combined. Add the reserved dry ingredients and mix on low, until just combined. Fit the Cuisinart® Electric Cookie Press with desired disc as instructed on page 2. Load the cookie dough to the MAX fill line. Press cookie dough out onto an ungreased/unlined baking pan, about 1 inch apart. Bake in the preheated oven for about 12 minutes, or until lightly golden around the edges. Cool cookies before removing from pan.
