Cooking spray or melted butter ½ cup all-purpose flour ⅓ cup light brown sugar, packed 7 tablespoons granulated sugar, divided ⅓ cup unsalted butter, cut in ½-inch pieces ½ cup regular oatmeal (not quick or instant) ⅓ cup pecan or walnut pieces ½ teaspoon ground cinnamon 1½ pounds ripe, but firm pears, peeled, cored and quartered – bottom ends cut flat 2 teaspoons fresh lemon juice ⅓ cup dried cherries, cranberries or raisins ½ teaspoon pure vanilla extract

Instructions

Arrange rack in lower third of oven. Preheat oven to 350°F. Lightly coat a 1¼ quart decorative baking dish with cooking spray or melted butter; reserve. Place the food processor attachment on the stand mixer and turn to lock on. Place the flour, brown sugar, and 4 tablespoons of the granulated sugar in the food processor work bowl fitted with the metal chopping blade. Press ON and process using Speed 12 on the Stand Mixer for 10 seconds to combine. Add butter and process until mixture begins to come together, about 10 to 15 seconds. Add oatmeal, nuts and cinnamon; process until the mixture resembles large crumbs, about 10 to 15 seconds. Press OFF. Remove, transfer to a bowl. Use fingers to press into crumbs, reserve. Remove the metal blade and insert the slicing disc. Place pear quarters in feed tube – flat cut end down. Press On to slice, using medium pressure; continue until all pears have been sliced.. Transfer to a bowl and toss with remaining 3 tablespoons granulated sugar, lemon juice, dried cherries, and vanilla. Arrange in prepared baking dish – lightly pressing down to an even thickness. Sprinkle evenly with reserved crumb topping. Bake in the preheated 350°F oven until pears are tender and topping is browned and crisp, about 40 to 45 minutes. Serve warm with ice cream or softly whipped cream.
