Rum Walnut Bars


1/2 lb. butter, unsalted, softened but not melted
1 c. sugar
2 eggs, beaten
1 tsp. vanilla
1 tsp. rum
3 1/2 c. flour
pinch salt
1 c. chopped walnuts
Jam to spread on dough


Line a cookie sheet with parchment paper. Beat butter and sugar. Add eggs and beat well. Add rum and vanilla. Add flour and salt and mix well. Add nuts. Wrap in plastic wrap and refrigerate overnight. Cut into two uneven parts. Grate the larger part onto a lined cookie sheet. Spread with favorite jam. Grate rest of dough over the jam. Bake 350 degrees 45 to 50 minutes or until lightly browned. Cut into diamonds while hot.
