Ingredients

l Lemon cake mix
l pack lemon flavored gelatin
4 eggs
1/2 cup oil
3/4 cups water


Instructions

Combine cake mix, gelatin and eggs. Beat with your Cuisinart mixer on low for 2 minutes. Add oil and water. Beat 2 more minutes. The batter will be thin. Pour into greased and floured 9X13 inch pan Place in preheated oven until done. While still hot, pour Lemon Icing over cake and sprinkle evenly with coconut.

Lemon Icing

Combine 2 cups confectionary sugar with juice and grated rind of 1 lemon, mix well.
Place over hot water until ready to ice cake then sprinkle with 1 cup flaked coconut. Enjoy!
