Cranberry Bread

A very tasty dessert. This recipe was found years ago in reading book I used teaching second grade. It brings back fond memories. This can be used as a breakfast dish as well."

2 cups flour
1 cup sugar
1 1/2 tsp. baking powder
1 tsp. salt (optional)
1/2 tsp. baking soda
1/4 cup butter or margarine

1 egg, beaten
1 tsp. grated orange peel
3/4 cup orange juice
1 1/2 cups raisins
1 1/2 cups fresh or frozen cranberries (chopped)

Combine flour, sugar, baking powder, salt and baking soda in a large bowl. Cut in butter until mixture is crumbly. Add egg, orange juice and orange peel all at once. Stir just until mixture is evenly moist. Fold in raisins and cranberries.

Spoon into greased 9"x5"x3" loaf pan. Bake at 350 degrees for an hour to an hour ten minutes or until a toothpick inserted in center comes out clean. Remove from pan;cool on wire rack.

If you choose, you may substitute cranberries for raisins to have an all cranberry bread.
