jelly-filled thumbprints
delicate little cookies with fruit jam that melt in your mouth with the decadence of sweet chocolate."


1/3 cup butter softened
1/3 cup shortening
3/4 cup sugar
1 tsp baking powder
dash salt
1 egg
1 tsp vanilla
2 cups all-purpose flour
1 tbsp milk

1 cup of flaked coconut
raspberry jam
1/2 cup white chocolate wafers melted


beat butter and shortening with a mixer for 30 seconds. add sugar, baking powder, and salt. beat until combined. beat in egg and vanilla. add flour as much as you can and add milk until all flour can be easily incorporated into a nice dough. add the coconut.

shape dough into 1" balls. press into the middle with your thumb or a wooden spoon to make an indentation. spoon about 1/2 tsp of jam into indentation. bake at 350 degrees for 10 to 13 minutes. let them cool for 10 minutes. drizzle the melted chocolate over the cookies in a back and forth motion to create lines.
