Pumpkin Cheesecake Bars

Great fall treat and the aroma fills the house"


1 cup flour
1/2 cup packed brown sugar
5 Tbsp spft butter or margarine
1/2 cup finely chopped walnuts
8 oz. cream cheese
3/4 cup sugar
1 tsp allspice
1 1/2 tsp cinnamon
1 tsp vanilla
1/2 cup canned, solid packed pumpkin
2 eggs, lightly beaten


Combine flour and brown sugar in medium bowl. Cut in margarine to make crumb mixture (reserve 3/4 cup for topping.) Press remaining mixture into bottom of 8 x 8 inch pan. Pat down and bake for 15 minutes at 350 degrees. Cool. Combine remaining ingredients in large bowl. Beat until fairly smooth and pour over baked crust. Sprinkle with reserve crumb topping. Bake 30-35 minutes. Cool & refrigerate overnight. Cut & serve.

The only variation I find, is that I need to make more of the crumb mixture prior to baking. I prepare the recipe as is initially and then estimate how much more of the crumb mixture I will need. Follow the rest of the instructions as is.
