Suzie's Famous Cheese Cake

Fantastic made from scratch desert"


Pie Crust
1-1/2 cups graham cracker crumbs
1/2 cup sugar
1/2 cup butter
3 (8-ounce) packages cream cheese
1-1/2 cups sugar
3 large eggs
2 teaspoons vanilla
2 cups of sour cream
3 tablespoons of sugar
1 tablespoon vanilla


Crust: Combine crumbs with sugar. Work in butter. Line an 8" springform pan with crumb mixture.
Filling: Combine cream cheese, sugar, eggs, and vanilla. Beat 30 minutes. Turn into prepared crust and bake at 350 degrees, 30 minutes. Cool, remove sides of springform pan and spread topping on cake. Bake at 450 degrees 5 minutes.
Topping: Combine sour cream, sugar & vanilla and set aside. Note: Bring cream cheese & eggs to room temperature. This will ease blending. Gradually put in blender 1 egg, 1 pkg cheese vanilla & 1/2 cup sugar. Blend until well mixed. Add remaining ingredients and blend until well mixed and creamy. Use a spatula to scrape sides of blender during process.
Hint 1: I bake mine longer, when sides start to rise up, maybe 45 - 50 minutes total. Depends on your oven.
Hint 2: Cool only about 1 hour, then put on topping.
Hint 3: Do not take off sides of the pan when you put on the topping. Leave the sides on.
Hint 4: Cool completely in refrigerator before taking off the sides of the pan.
