ALMOND JOY FLANUser Submitted Recipe
1 c. sugar
1 (14oz) can sweetened condensed milk
1 (14oz) can coconut milk
2 tsp. almond extract
½ c. sweetened coconut flaked + ¼ c. for topping
2 semi sweet chocolate squares for drizzle
¼ c. almond slivers for topping
Preheat oven to 325 degrees. I use a heavy bottom sauce pan over medium high heat melt sugar stirring constantly until lightly brown. Pour sugar into buttered ramekins and swirl around until bottom is covered. In a Cuisinart stand mixer bowl beat eggs until light yellow and fluffy. Add sweetened milk, coconut milk, almond extract and coconut flakes mix until combined well. Pour into ramekins ¾ the way full. Carefully put into a water bath. (A water bath is simply a pan with water in it where you set the ramekins. Be careful not to get any water in the flan mixture.) Carefully set pan into preheated oven and cook for about 1 hour to 1 hour and 15 minutes. Flan will be firm all except the very center it will have a little jiggle room. Remove from oven and let cool completely. Flip flan on to serving plate and sprinkle coconut on top. Melt you chocolate over a double boiler and drizzle all over flan and plate and top with almond slivers or chopped almond.
