Cute as a button and easy to make this pie will be your most used and requested recipe for parties and picnics in no time.
Lady Bug Pie
1 Oreo pie shell
4 cups strawberry ice cream
1 3-oz package of instant vanilla pudding(or size needed to make 2 cups of prepared pudding)
3 cups heavy whipping cream, divided
1 cup mini chocolate chips
1 tsp vanilla
1/4 cup powder sugar
red food coloring
25-30 mini Oreos
Allow ice cream to soften/melt slightly so that you can work with it. Scoop it in to the pie shell and carefully spread it to evenly cover entire bottom of shell. Cover and place in freezer.
In an electric mixer whip the pudding mix, 1 1/2 cups of heavy whipping cream and the chocolate chips until combined and slightly fluffy.
Spread the pudding evenly in the pie on top of the ice cream, cover, and return to freezer.
Freeze for 1 hour -3 days. If it has been in the freezer for more than 1 hour allow it to thaw for a little before continuing.
In an electric mixer whip 1 1/2 cups of heavy whipping cream, vanilla, sugar and food coloring to the desired color of red. Whip until stiff. Spread on to the pie.
Arrange the Oreos in a pattern that you like, or you think looks like a little lady bug.
Slice in to 8-12 pieces and serve before it thaws.
