An easy to make candy that is both delicious and refreshing.

Mint Patties Candy
INGREDIENTS

  • 1 package (8oz) Cream Cheese, room temperature

  • 1 tsp Peppermint extract 

  • 8-9 cups confectioners sugar

  • ¾ cup semi sweet chocolate chips 

  • ¾ cup milk chocolate chips 

  • 2 tbsp shortening

Instructions

  1. In a large bowl mix the cream cheese and peppermint extract together. Mix in the confectioners sugar half a cup at a time until the mixture is very thick and stiff. Use your hands to roll teaspoons of the mix into 1" balls and space them apart on a waxed paper covered cookie sheet. Press each ball with the palm of your hand to flatten. Cover and refrigerate 1-2 hours. 

  2. In a microwave safe dish, mix the chocolate chips with the shortening. Melt at 50% power for a minute, stir, then continue to heat till totally melted and smooth in texture. Cool slightly.

  3. Drop the mint patties into the melted chocolate to cover and then carefully place them back on the waxed paper. Refrigerate to setand keep refrigerated until ready to enjoy!
