Queen Mother Flourless Chocolate Cake

A nice finish to a delicious French meal! Served with whipped cream, raspberry chantilly, saffron sauce, coffee bean, candied orange peel, mint and powdered sugar. "


12 oz. semi-sweet chocolate
12 oz. sliced almonds
12 oz. butter
12 eggs, separated
1 1/2 cups sugar
Pinch salt

Chocolate ganache:
1 lb. dark chocolate
2 cups cream
2 tsp. instant coffee


Toast almonds
Double boil chocolate
Soften butter to room temp. in mixing bowl(to not break mixer)
Blend almonds & 1/2 cup sugar in food processor
Mix butter w/ 1/2 cup sugar
Add 1 yolk at a time
Add chocolate slowly
Move contents to another bowl
Whisk in salt
Beat egg whites w/ 1/2 cup sugar to soft peaks
Fold in egg whites to chocolate mixture
(2) 2x9in. cake pans
Butter pans and coat w/ bread crumbs
Bake 20 min. at 375
Turn oven down to 325 for 45 min.
Chocolate ganache: Boil cream
Pour onto cut chocolate w/ instant coffee
Let sit for 10-15min.
Cover cake
Serve at room temp.
