A refreshing and satisfying dessert after any meal.
Minty Mocha Trifle
INGREDIENTS
For the Cake:
1 1/2 cup sugar
3/4 cup butter, softened
2 eggs
2 1/4 cup flour
3/4 t. salt
1/4 t. baking powder
1 1/2 t. baking soda
1 1/4 cup strong, hot coffee
1/2 cup unsweetened cocoa powder.

For the Cheese Mixture:
3/4 cup sugar
3/4 cup sour cream
8 oz. cream cheese, softened
1/2 t. vanilla
1 t. Creme De Cacao
3 tbsp. Creme De Menthe

For the Pudding Mixture:

1 pkg instant vanilla pudding and pie filling
2 cups cold milk
1 pint heavy cream
1 tbsp. Creme De Menthe
1 tbsp. Creme De Cacao
3 tbsp. powdered sugar
1/2 t. vanilla

For the Coffee Mixture:
3/4 cup strong coffee
1 heaping tbsp. sugar
1 tbsp. Creme De Cacao
Instructions
For the chocolate coffee cake:
Combine butter and sugar and mix until creamy.
Add eggs, one at a time.
Sift together all dry ingredients, but leave out cocoa powder.
Combine the cocoa powder and coffee until dissolved.
Alternating, Add flour mixture and coffee mixture to butter. Beat until smooth, about 1 minute.
Pour into 2 greased 9" cake pans
Bake at 350, for approx. 25-30 minutes, or toothpick comes out clean
Let cool completely.
For creamy cheese mixture
Combine 3/4 cup sour cream and 8 oz. cream cheese in a mixture. Add 3/4 cup sugar, beat until smooth.
Add 1/2 t vanilla, 1 t. creme de cacao, and 3 tbsp. creme de menthe. Mix till combined. Set aside.
To Make Pudding filling
Following package directions to make pudding. (Combine dry mix with 2 cups cold milk, whisk 2 minutes. Then refrigerate).
Take the heavy cream and pour into a stand mixer with whisk attachment. Beat until stiff peaks form and add 3 tbsp. powdered sugar. Divide in half. Save one half to garnish top once finshed. To the other half add 1 tbsp. creme de menthe, 1 tbsp. creme de cacao and 1/2 t. vanilla. Once combined add pudding. Set aside.
To Make coffee mixture
To 3/4 cup strong coffee add 1 heaping tbsp. sugar and 1tbsp creme de cacao. Stir till dissolved.
Assemble! Pour spoonfuls of coffee mixture over cake. Take cake and tear into chunks. Put about 1/3 into the bottom of trifle bowl. Add about 1/2 of the cream cheese mixture on top of that. Then about 1/2 of the pudding mixture on that. Then another 1/3 of the cake, with the rest of the cream cheese, and pudding and finish with chunks of cake and the reserved whipped cream.
Refrigerate at least 3 hours.
