Apple Treat

A combination between an apple pie and an apple cobbler with a sweet rich taste."

Pastry Crust
8 ounces (2 sticks) unsalted butter, softened
¾ cups confectioners sugar
4 ½ teaspoons pure vanilla extract
2 cups all purpose flour
1 teaspoon salt

Apple Filling
2 pounds of Golden Delicious apples, peeled, cored, cut into ½-inch cubes
1/3 cup sugar
6 tablespoons (3/4 stick) unsalted butter
2/3 Cup whipping cream
2 teaspoons cinnamon
1 teaspoon pumpkin pie spices
3 teaspoons vanilla
4 tablespoons sugar

Pastry Crust
Sift flour and salt into separate bowl. Mix butter and sugar on medium speed until pale and fluffy, about three minutes. Add vanilla to butter and sugar mixture until blended. Add sifted flour and salt to mixture until just combined about 15 second. Roll dough into ball, cover with plastic wrap, and refrigerate 1 to 2 hours.
Apple Filling
Melt the butter in a skillet over medium heat. Add the sugar when the butter is melted and combined about 1 minute. Then add the apples and sauté for about ten minutes until apples are brown and tender and juices form. Add the whipping cream, cinnamon, pumpkin pie spices, vanilla, and sugar. Simmer until sauce thickens about 3 to 4 minutes. Remove pan from stove and allow mix to cool and continue to thicken.
Roll out pastry crust or press into a pie pan (bottom and sides) or shaped pan of your choice. I use a heart shaped cake pan. Pour apple mixture into pan on top of crust. Then cover filling with crust or cover with cut out shapes. Sprinkle top of crust with sugar and cinnamon.
Bake for 30 to 40 minutes in 350 degree oven. Allow to cool before serving. Top with vanilla ice cream or caramel sauce as desired. Enjoy!
