Roberta's Best Brownies

Rich and creamy brownies"


1/4 Pound Butter
2 Ounces Bitter or Baking Chocolate
2 Whole Eggs
1 Cup Sugar
1/2 Teaspoon Salt
1 Teaspoon Vanilla Extract
1/2 Cup Flour
1/2 Cup Chopped Pecans
1/2 Cup Semisweet Chocolate Chips


Slowly melt butter and chocolate in glass bowl in microwave. Set on med/high for 2 min. Stir frequently.
In a bowl mix together by hand the slightly beaten eggs and chocolate/butter mixture.
Add the sugar, salt, vanilla and flour and blend well. DO NOT BEAT WITH ROTARY OR ELECTRIC BEATER. Just stir quickly by hand. You don't want to add any air to this batter.
Pour the batter into a lightly greased and floured 8" x 8" square cake pan. Sprinkle chopped pecans and chocolate chips over the uncooked batter. Press down slightly with your hand or the back of a spoon so that chips and nuts are barely embedded in batter. Bake at 350 deg. F for 28 or 29 minutes. Do not overcook. These brownies are best when they are slightly undercooked. Cut into 9 -12 rectangular pieces. Cool before removing from pan.
