JD's Original Apple PieUser Submitted Recipe
Cheddar Cheese crust
3/4 C. All-purpose Flour
1/4 C. Cornmeal
1/2 tsp. Salt
1/2 C. shredded Cheddar cheese, chilled
1/3 C. Vegetable shortening
1 Tbl. cold Lemon juice
2 to 5 Tbl. Ice Water
6 C. Apple, peeled, cored and sliced
2 Tbl. Lemon juice
1 Egg white
2 tsp. cold water
2 Tbl. All-purpose Flour
3/4 C. Sugar
1 tsp. Cinnamon
1/4 tsp. ground Nutmeg
1/8 tsp. ground Allspice
1/4 tsp. Salt
1/2 C. dried, sweetened Cherries
2 Tbl. Butter, chilled, small pieces
2 Tbl. Caramel ice cream topping
Heavy Cream, Half-n-Half or Milk
1 Tbl. Sugar
Cheddar Cheese crust:
Chill all pie crust ingredients in the refrigerator for 30 minutes
In a medium bowl sift together Flour, Cornmeal and Salt.
Stir in cheese.
Cover and refrigerate for 20 minutes
Cut in shortening until mixture forms coarse crumbs.
Sprinkle Lemon juice
Add Ice Water, one tablespoon at a time; mix gently by hand, until dough just holds together. Do not over-mix, Do not knead
Form into a ball.
Separate into two pieces, one slightly larger
Wrap each in plastic wrap, and flatten to a thick disk
Chill for 2 hours before rolling.
Preheat Oven to 450 degrees
Sprinkle Apple slices with Lemon juice, cover, set aside
Mix together Flour, 3/4 C. Sugar, Spices and Salt, in a large zip-lock bag.
Place Apple slices in dry-mixture bag, mix until evenly coated
Mix in Cherries
Refrigerate mixture for 20 minutes
Roll out smaller crust dough
Fit crust dough into a, glass, 9-inch pie plate
Whisk together Egg whites and water, for a glaze
Brush the crust bottom and sides with the Glaze
Arrange the Filling mixture in the pastry-lined pie plate.
Arrange evenly, and press down to eliminate air spaces
Scatter Butter pieces evenly over top
Drizzle Caramel topping over Apples
Roll out other, larger, crust, cut vent slits for top crust
Fit top crust tightly over the contour of the filling, crimp edges all around
Brush top crust with Cream
Sprinkle 1 Tbl. Sugar
Bake 15 minutes in 450 oven
Lower oven temperature to 350 degrees F.
Continue to bake 30 minutes, until golden
Cool completely on a rack
