Chocolate Pasilla CookiesUser Submitted Recipe
1 c. light brown sugar, lightly packed
½ c. granulated sugar
1 c. margarine
2 tsp. Vanilla extract
2¾ c. all-purpose flour
1 tsp. Baking soda
1 tsp. Salt
½ tsp. Ground coriander
3 tbsp. Dark cocoa powder
2 tsp. Pasilla chili powder (you can substitute ancho chile if you can’t find pasilla)
½ tsp. Baking powder
2 c. semi-sweet chocolate chips
2 tsp. White vinegar
Preheat oven to 375 degrees. In a large bowl cream together the margarine and sugars. Beat in the egg and add the vanilla. In a medium bowl combine all of the dry ingredients except the chocolate chips. Add the dry ingredients into the sugar mixture and mix until combined. Stir in the vinegar and chocolate chips.
Drop by rounded teaspoonfuls onto an un-greased cookie sheet. Bake for 10-12 minutes. Cool slightly before removing to wire racks. Makes about 3-dozen.
