Chicken Ratatouille w/ Potato Gnocchi

• Ground Chicken (one pound)
• large onion-sliced
• Butter (2 TBSP)
• salt (Kosher)
• course black Pepper
• Extra Virgin Olive Oil (2 TBSP)
• large zucchini -cubed (skin on)
• 23 oz. Pasta Sauce (Bertoli Rustic Cut Roasted Garlic Marinara Garden Veg.
• Potato Gnocchi (package)
• 3 cloves minced garlic
• grated Parmesan cheese

1. Melt butter with olive oil in large skillet over medium heat
2. Add sliced onion stir to coat and cooked til tender
3. add ground chicken
4. add kosher salt and coarse pepper to taste
5. add minced garlic and stir
6. when chicken is no pink, add cubed zucchini
7. cover and cook til zucchini is tender, stirring occasionally
8. Add pasta sauce, stir, simmer for about 15 minutes, stirring occasionally
9. Meanwhile, cook package of gnocchi as per directions on package
10. serve about 1 cup of cooked gnocchi with 2 cups ratatouille on top
11. Top with Parmesan cheese
