Chewy, wholesome bars that are great for breakfast or snack on-the-go. Kids will love them too! No added artificial ingredients or preservatives like storebought bars.
2T macadamia nuts
1T truffle almonds
2T shredded coconut
2T pumpkin seeds
4T gluten-free oats
½ teaspoon salt
2T oat flour
1T flax/chia seeds (ground)
1T cashew butter
1T almond butter
2T soft dates (or pre-soak in water)
1T dried papaya
3T red quinoa (cooked, but still slightly
1T mini chocolate chips
1T refined coconut oil

First add all nuts into food processors and chop into pieces. Then add all other dry ingredients (next 6 ingredients) and blend. Finally, add rest of ingredients, blending just until combined and forms a sticky ball.
Scrape into lightly greased glass dish and press down firmly.
Bake @ 350° for approximately 20 minutes or until outside edges are starting to brown.
Remove from oven, let cool completely. Then cut into desired bar sizes and store in fridge.
