The waffles alone make a delicious everyday breakfast. Add the berry syrup and ice cream for an extra special holiday breakfast or desert. The waffles also freeze beautifully and are ready to go with just a quick trip in the toaster.
1 Cup AP Flour
¾ Cup Wheat Flour
2 Tsp Baking Powder
½ Tsp Baking Soda
½ Tsp Salt
2 Beaten Egg Yolks
2 Cups Milk
½ Tbs Lemon Juice*
½ Cup Cooking Oil or melted shortening
2 Stiffly beaten egg whites
½ Cup orange juice
¼ Cup sugar
2 Cups fresh or frozen berries of your choosing
1 Tbs vanilla or 1 vanilla bean
1 Cup of Your Favorite Vanilla Ice Cream
430 Calories per waffle with ice cream and syrup
Mix together dry ingredients. In a large bowl combine yolks, milk, lemon juice, and oil. Stir into dry ingredients. Fold in the egg whites. Pour batter into hot waffle iron and cook.
Pour all ingredients in a saucepan over med high heat. Cook until berries become soft and syrup is thick, about 10 minutes.
Place a waffle on a plate and top with berry syrup topped with a dollop of vanilla ice cream. Enjoy!
