The Best Breakfast Potatoes

I love homefries and for years I have been trying to come up with the perfect ingredients for my own tasting pleasures! Here is my recipe.




2 large russet potatoes, (skin on) chopped into ½'' pieces ½ green pepper, chopped into small pieces. Optional: 1 red chile, chopped ¼ onion, chopped into small pieces 2 cloves garlic, minced 1 tbs. butter 2 tbs. olive oil ¼ teaspoon garlic powder 1 teaspoon paprika ¼ teaspoon ground pepper ¼ teaspoon salt or to taste 2 tbs white vinegar

1. Boil potatoes until almost tender - about 5 minutes. Do not overcook or else they will break down in the frying pan while cooking. 2. Meanwhile chop vegetables. Heat oil and butter in non-stick frying pan over medium. Drain potatoes. Add onion, pepper, garlic and cooked potatoes to frying pan. Saute for 5 minutes and lower the heat if needed so that nothing is cooking too fast or burning. 3. Add spices and seasoning. Add extra salt and pepper if desired. Add vinegar. Saute homefries until everything is fully cooked but not crispy. - about 3 more minutes. Serve hot alongside eggs and toast.
