Strawberry pancakes

Who doesn't love pancakes, especially healthy ones you can eat every morning and give yourself boost of nutrition. These whole wheat strawberry pancakes will start off your day fresh!




2 cups whole wheat flour 2½ teaspoons baking powder 1½ teaspoons vanilla 2 cups of fresh strawberries or frozen (defrosted) 1 cup low-fat milk 4 eggs ½ teaspoons salt 2 table spoons unsalted butter (melted) Cooking spray or vegetable oil

1. Mix all the dry ingredients in one bowl. In another bowl, whisk together all the liquid ingredients. 2. Combine wet and dry ingredients together until just combined. Cut strawberries into quarters. Fold in strawberries into the batter. (If using frozen strawberries, defrost first in a microwave) 3. Grease and heat 7 in. nonstick skillet over medium high heat. Scoop about 3 table spoons of batter for each pancake and spread around the pan. Cook on one side until bubbles form and edges begin to brown. Flip and cook on another side for 30-40 seconds. Repeat the same process for the rest of pancakes. Serve warm with maple syrup and butter.
