Cookies you can eat for breakfast or a snack!


1/2 cup butter, softened 1 1/2 cup peanut butter 3/4 cup firmly packed brown sugar 3/4 cup granulated sugar 1 tablespoon molasses 1 teaspoon vanilla 3 eggs or 3/4 cup egg substitute 2 teaspoons baking soda 1/4 cup ground flax seed 1/4 cup wheat flour 2 teaspoons cinnamon 4 cups oatmeal (quick oats or process 3 cups old fashioned briefly in a food processor, add last cup unground)

Preheat oven to 350 degrees. In a large bowl, combine margarine and peanut butter. Add sugars, molasses, vanilla and eggs. Stir well. Add all remaining ingredients. Stir until completely combined. Drop with 1 1/2 tablespoon scoop onto ungreased baking sheet. Bake 10 minutes. Cool.
