Cookies you can eat for breakfast or a snack!
½ cup butter, softened
1½ cup peanut butter
¾ cup firmly packed brown sugar
¾ cup granulated sugar
1 tablespoon molasses
1 teaspoon vanilla
3 eggs or ¾ cup egg substitute
2 teaspoons baking soda
¼ cup ground flax seed
¼ cup wheat flour
2 teaspoons cinnamon
4 cups oatmeal (quick oats or process 3 cups old fashioned briefly in a food processor, add last cup unground)

Preheat oven to 350 degrees. In a large bowl, combine margarine and peanut butter. Add sugars, molasses, vanilla and eggs. Stir well. Add all remaining ingredients. Stir until completely combined. Drop with 1½ tablespoon scoop onto ungreased baking sheet. Bake 10 minutes. Cool.
