A light and fluffy quiche with just the right amount of spinach and mozzarella cheese. Can be eaten for breakfast, lunch or dinner. Everyone will enjoy this mouthwatering quiche!
6 large eggs
1 cup whole milk
1 cup mozzarella cheese, shredded
1 cup frozen chopped spinach, thawed and drained
1 medium onion, diced
3 cloves garlic, minced
1 teaspoon salt
½ teaspoon black pepper, ground
1 unbaked pie crust

Preheat oven to 350 degrees.
Place the pie crust in a pie dish and set aside.
In a medium pan, saute the onion and garlic till caramelized.
In a medium bowl blend eggs and milk till evenly mixed.
Add the spinach, onion and garlic to the egg and milk mixture.
Next add the cheese and mix well till evenly incorporated.
Add the salt and pepper to the bowl and do a final mix.
Pour the mixture into the unbaked pie crust.
Sprinkle the top with a little more mozzarella if desired.
Place pie in oven and cook till golden and puffed up in the center.
It should be done in 1 hour.
When done the quiche should sit for about 5 minutes before serving.
