Ingredients
1 lb. Jimmy Dean sausage
1 small chopped onion
½ chopped green pepper
1 or 2 cans Rotel tomatoes
8-10" flour tortillas, torn into bite size pieces (I cut mine up with a pizza cutter)
3 cups or 12 oz shredded cheese (Colby Jack, Cheddar, Pepper Jack, etc
6 large eggs
½ teaspoon pepper
1 teaspoon salt
1 cup milk

Instructions
Brown and drain sausage...add pepper and onion. Sauté until glossy. Stir in tomatoes. Simmer 10 min.
In greased 9"x13" pan, layer ½ of the tortillas, sausage mixture and cheese. Repeat layers.
Whisk eggs with salt, pepper, and milk. Pour over layers. Cover with foil.
Let sit for 8 hours or overnight in refrigerator.
Preheat oven to 350 degrees and bake for 30 to 40 min.
**it can sometimes be a little watery, so I usually add a couple more tortillas and cook it a little longer, especially if straight out of the refrigerator.
Garnish with a little more cheese and serve with salsa. Yummy!
