We enjoy this quiche for breakfast,lunch or dinner. Leftover veggies can be used, and you can substitute any combo of favorite vegetables.
6 oz. grated jalepeno pepperjack cheese
¼ c diced onions
¼ c diced green peppers
¼ c diced red peppers
4 eggs beaten
⅔ c flour
½ teaspoon baking powder
2 T oil
1½ c milk
½ teaspoon salt and pepper to taste

grease a 9x9" pyrex baking dish
sprinkle all the cheese on the bottom of dish. sprinkle all the veggies over the cheese.
Combine and mix the rest of the ingredients in a bowl and pour over the cheese and veggies.
Bake at 350 degrees for 45 minutes.
Cut into squares and serve hot.
