Crunchy twice baked biscuits, similar to biscotti, but with more texture. Great for dunking into tea or coffee!
3 cups flour
2 cups muesli or granola cereal (preferably with nuts and dried fruit)
1-1¼ cup sugar
½ Tbsp baking powder
½ Tbsp cream of tartar
½ teaspoon salt
1 cup buttermilk

Preheat oven to 400 F. Place all dry ingredients into mixing bowl. Cut up butter and pulse/mix into flour mixture until crumbly (can be done by hand or in food processor). Beat together eggs and buttermilk; add to dry ingredients. Add chopped nuts and/or dried fruits as desired. Drop by large spoonfuls (like scones) onto sprayed baking sheet (or use a silicone pan liner) bake for 20-30 minutes, and let cool. Lower oven temp to 250 F. Slice lengthwise and place (cut side down) on baking sheet. Bake slowly until golden brown and dry.
