2 cups unbleached flour
⅓ cup sugar
1 teaspoon baking powder
¼ teaspoon baking soda
½ teaspoon salt

Preheat oven to 400 degrees
8 Tablespoons unsalted butter cut in small pieces until resembles mix with chunky blend of unsalted butter bits and flour
½ cup raisins or dried fruit to flour mixture
Mix above together with blend of
1 large egg (beaten with
½ cup sour cream and zest of one lemon
Blend quickly into ball and flatten into a disk on board to about ½ inch thick (or two disks to make smaller scones.
Cut large or small disks into 8 wedges and place on ungreased cooking sheet (or Pam sprayed surface).
Paint each scone wedge with beaten egg and sprinkle with sugar.
Bake for 15-17 minutes . (Watch them around 13 minute mark for browning)
