Oatmeal Cake with Blueberries

This cake is delicious - always a hit with family and co-workers!




1 cup quick oats 1¼ boiling water 1 stick margarine, softened ¾ cup white sugar ¾ cup light brown sugar 2 eggs 1 teaspoon each: salt, baking soda, cinnamon, and vanilla 2 cups all-purpose flour 1 pint blueberries (fresh or frozen) Whipped topping (optional)

Pre-heat oven to 350 degrees. Coat 9x13 baking pan with cooking spray. Mix oats with boiling water, set aside.
Mix margarine, sugar, eggs, and spices together until well blended. Add flour, a little at a time. Add oatmeal, blend well. Stir in blueberries.
Bake for 40 minutes. Cake texture is similar to bread pudding. Serve warm with a dollup of whipped topping.
