Multi-Grain pancakes

Healthy, multi-grain pancakes. The various flours each contribute a different nutritional profile and flavor while the flaxmeal adds a good amount of omega-3's.


1/2 cup All purpose Flour 1/4 cup Whole wheat flour 1/4 cup Rye flour 1/4 cup Soy flour 1/4 cup Flaxmeal 1 cup low fat milk 1 egg 1/3 cup olive oil 2 teaspoons baking powder 1 teaspoon sugar pinch ground cinnamon 1/2 teaspoon vanilla extract

Mix all dry ingredients together. Mix wet ingredients into dry ingredients and stir until fully mixed (slightly lumpy). Pre-heat frying pan or griddle until water splashed on griddle jumps. Spray griddle with cooking spray. Pour batter onto griddle in 4-inch circles. Flip pancakes when bottom side is browned and top is bubbling. Serve with your favorite toppings.
