Multi-Grain pancakes

Healthy, multi-grain pancakes. The various flours each contribute a different nutritional profile and flavor while the flaxmeal adds a good amount of omega-3's.




½ cup All purpose Flour ¼ cup Whole wheat flour ¼ cup Rye flour ¼ cup Soy flour ¼ cup Flaxmeal 1 cup low fat milk 1 egg ⅓ cup olive oil 2 teaspoons baking powder 1 teaspoon sugar pinch ground cinnamon ½ teaspoon vanilla extract

Mix all dry ingredients together. Mix wet ingredients into dry ingredients and stir until fully mixed (slightly lumpy). Pre-heat frying pan or griddle until water splashed on griddle jumps. Spray griddle with cooking spray. Pour batter onto griddle in 4-inch circles. Flip pancakes when bottom side is browned and top is bubbling. Serve with your favorite toppings.
