Mom's Breakfast Casserole

1 pound, small red potatoes 1 package fresh mushrooms,rough chopped 1 large purple onion,chopped 1 green bell pepper,chopped 1 yellow bell pepper, chopped 1 red bell pepper, chopped 1 orange bell pepper, chopped 1 can fiesta/nacho cheese sauce/soup 1 pound bacon 1 pound smoked sausage 1 package shredded cheese of your choice 1 dozen eggs milk

In a saucepan with salted water, boil the potatoes.At the same time; in a skillet, saute your mushrooms,onions, and bell peppers. Drain your potatoes and put them in a large foil pan. Add your vegetable mixture when their done. Cook the bacon that the veggies sauteed in. Pull the bacon and set aside to drain excess fat and cool. Rough chop it when it's ready. Chop up your smoked sausage and saute it. Then add to veggie and potato mixture and mix well. Let's not forget your bacon in the mix too. What's a casserole without the bacon. Open the cheese sauce/soup and add to the mixture. In a mixing bowl, crack your dozen of eggs and add some milk. Not a lot. Just enough to blend the eggs to a frothy appearance. Sprinkle in salt and pepper to season. Pour eggs over the casserole. Gently stir into the casserole until infused well. Sprinkle shredded cheese on top and put into the oven. Bake until the eggs are cooked and cheese is melted seeing as everything else is already cooked.
