This is a simple breakfast that can be prepared quickly without any fuss. Serve with thick slices of tomato or your favorite sausage.
3 squares of matzo
1/2 yellow onion, medium, diced
2 Tablespoons butter, unsalted
salt and pepper to taste

Break matzo into smaller pieces and soak in water. When rehydrated, drain and season with salt and pepper.
Crack eggs, scramble, season, add to matzo and toss until matzo is well coated.
Meanwhile, sauté onion in butter until slightly brown.
Add matzo mixture and cook until heated through and eggs are completely set.
