20 ct pkg corn tortillas (shredded)
3 tbs vegetable oil
8 eggs beaten
8 oz cream cheese
⅓ cup heavy cream
1 jalapeno (seeded and diced)
2 Roma tomatoes diced
1 small yellow onion (diced)
1 pkg sliced mushroom
1 pkg shredded sharp cheddar
1 pkg shredded jalapeno jack cheese

Heat oven to 350.
In a large skillet heat vegetable oil. Add shredded corn tortillas and saute for 3-4 mins. Remove tortillas and add jalapeno, mushroom & onions to heated skillet.
Whipped cream cheese until smooth. Add beaten eggs and heavy cream until well blended.
Fold in cheese, tomatoes and shredded tortillas. Place in greased baking dish. Cover with foil and bake for 30 mins.
