Lefty d’Chef’s Griddle cakes


• 11/2 tablespoon brown sugar • 11/2 tablespoon white sugar • 1 tablespoon of baking soda • 2 eggs slightly beaten • 4 tablespoons olive oil • 1 teaspoon vanilla extract • 1 3/4 cups all-purpose flour • ¼ cup of Buckwheat flour • 1 ¾ cups of Buttermilk, or substitute..Cream, Sourmilk, yogurt, sourcream • ***ADD 1 YOLK FOR WAFFLES

Whisk together all the dry, then add the wet until just blended..some small dry lumps are acceptable. Heat a large skillet or griddle over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface, about 3 minutes. Flip with a spatula, and cook until browned on the other side. Plate and keep warm in a 200 deg. Oven * I’ve known some creative folks who’ve added chocolate chips and an array of other things to these griddle cakes just as an experiment of course 
