The kids ask for these pancakes every morning. They are simple, fast and so good fresh that the kids eat them without any maple syrup. They are also low fat and freeze and re-heat well.
2 cups flour
1 TBS sugar
4 teaspoon baking powder
1 teaspoon salt
1.5 cups skim milk
0.25 cup chocolate chips

Mix dry ingredients in mixer with flat blade. Add milk and eggs. Beat on setting 4 or 5 until batter is smooth.
Spray pan with cooking spray. Heat to medium. Drop batter 2-4 TBS onto pan (depends on what size you want). Scatter 4 or 5 chocolate chips onto each pancake. Flip when one side is done.
