Ingredients

1/2 lb Chorizo sausge 1/2 onion 1 tomato 1 garlic clove 1 corn tortilla 2 eggs 1/2 cup cheese 1 tbs canola oil salt and pepper to taste

Instructions

Heat a cast iron skillet on medium high. Chop all vegetables. Add onions to skillet and cook for 3 minutes. Add garlic and chorizo and cook for 3 minutes. Add tomatoes and cook until sauce is running and chorizo is fully cooked. Add salt and pepper to taste. In a different skillet, warm the tortilla and set aside. Make 2 over easy eggs. Prepare the tortilla first, add the eggs on top, then the chorizo sauce and cheese, and serve with black beans. Enjoy!
