Ingredients

  • 1onion, halved
  • 1large green bell pepper, cut to fit medium
  • feed tube and seeded
  • 2tablespoons extra virgin olive oil
  • 4russet potatoes (about 1 to 1½ pounds),
  • scrubbed
  • 1teaspoon kosher salt
  • ½teaspoon smoked paprika
  • ¼teaspoon chili powder
  • ¼teaspoon freshly ground black pepper

Preparation

  1. 1. Insert the dicing grid and disc. Dice onion.*
  2. Reserve in large work bowl. Dice pepper.*
  3. Reserve with diced onion.
  4. 2. Heat olive oil in a large skillet over medium
  5. heat. When oil is hot, add the diced onion
  6. and pepper. Cook, stirring frequently,
  7. until soft and onion is translucent, about 5
  8. minutes.
  9. 3. While onion and pepper are cooking, dice
  10. potatoes. Add to skillet with the salt, paprika chili powder and black pepper; stir. Cover
  11. and cook until potatoes are fully cooked
  12. through, about 20 minutes.
  13. 4. Taste and adjust seasoning as desired. Serve
  14. immediately.
