Heaven's Best Blueberry Coffee Cake Teaser: Description: This very simply, very satisfying blueberry coffee cake has all the makings of a perfect snacking cake. Pop one in the oven, call some friends over, brew a pot of coffee and have a great time! Great for after school snack, too.
2 C flour
2 teaspoon baking powder
½ teaspoon salt
8 oz cream cheese softened (I use lowfat)
1 stick butter, melted
1½ c sugar
2 teaspoon vanilla
2 c fresh or frozen blueberries
3 tablespoon sugar
1½ teaspoon cinnamon

Preheat oven to 350, grease a 13x9x2 pan
Mix together flour, powder, and salt in a small bowl
In mixer bowl, beat cream cheese and butter until creamy, add sugar, beat until combines. Add eggs, one at a time, until blended well. Add flour slowly, beating until well combined. Add vanilla, then fold in blueberries.
Spread in pan. Mix together remaining sugar and cinnamon, and sprinkle on top. Bake 50-60 minutes until toothpick inserted in middle comes out clean. Cool on rack, then cut and eat! Be prepared, it's HARD to eat only one piece. I have also made this with fresh cherries, and peaches, drained well.
