Look like pancakes but much better nutritionally since they have oatmeal and buttermilk. I like to serve these with marmalade and lots of maple syrup as I am from Canada!
Ingredients
2 tbs soft butter
onelarge beaten egg
1 cupbuttermilk, shaken
½ cupall purpose flour
½ cupoatmeal
2 teaspoon sugar
1 teaspoonbaking powder
½ teaspoonbaking soda

Instructions
Preheat oven to 200’F to keep pancakes/griddle cakes warm.
Place fry pan on heat to warm while mix soft butter, egg and buttermilk.
Add the flour and oatmeal next, mix, finally add sugar, baking powder, and soda.
Let stand for just a minute and watch batter rise.
Spoon batter onto buttered pan, cook 1-2 minutes on medium heat till edges bubble and bottom is golden brown.
Flip, cook another 1-2 minutes and place into warm oven till batch is done.
Serve with marmalade or syrup
