Green Chili Egg Puff

The best dish for breakfast crowds. Feeds a lot of people with minimal ingredients.




10 Eggs ½ cup All Purpose Flour 1 teaspoon Baking Powder ½ teaspoon Salt 1 pint(2 cups) small curd cottage cheese 1 lb (2 cups)Colby Jack Cheese shredded(You can use whatever cheese you like. its best with Colby) ½ cup melted butter (2)4oz cans chopped green chilis

Preheat Oven to 350 Degrees. Beat eggs until lemon colored. in a separate bowl combine dry ingredients with melted butter and mix until well combined. stir in butter and flour mixture into the egg mixture and whisk until well combined. add remaining ingredients to egg mixture. pour into well greased baking dish. bake for 35-45 min until center is firm.
