Delicious easy to make potato pancakes. Serve as special breakfast or with pork dishes.
2 lbs Potatoes (cut into cubes)
1 Onion (medium) (chopped)
2 Eggs (large)
½ teaspoon Salt
2 tablespoon flour

1. Wash and scrub potatoes.
2. Add all Ingredients to a blender and blend til smooth.
3. Fry in butter or oil until browned lightly on each side.
4. Pat off excess butter or oil.
Serve with sugar sprinkled on cakes applesauce or with sour cream.
