Heat cooking oil in a deep pan to 375 degrees (or test with a drop of batter, should cook quickly). Beat egg, milk and vanilla. Sift together flour, sugar, salt and baking powder. Add liquids and beat smooth. Pour batter in to funnel holding finger over bottom. Release batter into the oil making swirls from the middle outward until the cake is the size you would like. Fry until golden brown. Drain on paper towels but serve hot.
