The Cuisinart® Multicooker really can do it all. Be sure to have potholders on hand when
inverting the frittata onto a serving plate.

Ingredients

  • 1tablespoon olive oil
  • ¼to ½ medium leek, thinly sliced
  • ¼teaspoon kosher salt, divided
  • pinch freshly ground black pepper
  • 8large eggs
  • ½cup milk (any fat variety)
  • nonstick cooking spray
  • ½cup shredded cheese
  • 1tablespoon thinly sliced chives

Preparation

  1. 1. Put the olive oil in the cooking pot of the
  2. Cuisinart® Multicooker. Select Sauté/Brown.
  3. Set the temperature to Low, the time for 5
  4. minutes, and press Start.
  5. 2. Once the unit is preheated and the oil is hot,
  6. add the leek with a pinch each of the salt and
  7. pepper. Sauté until the leek is softened, but
  8. does not pick up any color. Remove and cool
  9. slightly.
  10. 3. Put the eggs, milk, and remaining salt into a
  11. large mixing bowl. Whisk until combined.
  12. 4. Lightly coat a round ceramic baking/
  13. casserole dish, no larger than 7 inches in
  14. diameter, with the nonstick cooking spray.
  15. Add the egg mixture and then stir in the
  16. sautéed leek. Top with the cheese and
  17. chives. Cover with aluminum foil that has also
  18. been coated with nonstick cooking spray.
  19. 5. Put the rack into the cooking pot of the
  20. Cuisinart® Multicooker with 2 cups of water.
  21. Cut a piece of aluminum foil that is about 24
  22. inches long. Fold in half lengthwise, then fold
  23. in half again two more times to create a strip
  24. about 24 inches in length and 2 inches wide
  25. to make a cradle.
  26. 6. Put the filled baking dish in the center of the
  27. foil strip and then carefully lift, and transfer to
  28. the rack in the cooking pot.
  29. 7. Secure the lid and select Custom. Set the
  30. pressure to Low, the time for 10 minutes,
  31. and press Start.
  32. 8. Once the tone sounds, press the Steam
  33. Release button to quickly release pressure.
  34. 9. When pressure is completely released,
  35. carefully open lid and, using potholders,
  36. lift the foil cradle and casserole out of the
  37. cooking pot. Uncover and invert frittata onto
  38. a serving plate and serve immediately.
