Ingredients

  • 4cups spinach, packed
  • ½– 1 tablespoon olive oil
  • 4poached eggs

Preparation

  1. 2 English muffins, split and toasted
  2. ½ cup hollandaise sauce

  4. 1. In large sauté pan, heat the oil over medium
  5. heat. Add the spinach, a little bit at a time.
  6. Cook until bright and just wilted. Keep
  7. warm.
  8. 2. On each muffin half, evenly distribute the
  9. spinach. Place one poached egg on top;
  10. finish with the hollandaise sauce (about 2
  11. tablespoons per serving).
  12. 3. Serve immediately.
