This is a quick, nutrious breakfast for your toddlers if they are NOT allergic to eggs. It is can be served with a side of cut up bananas or syrup, if you allow them to have that.
2-3 slices of Texas toast or regular sliced bread
3/4 cup of milk
1 tsp. brown sugar or white sugar
1 tsp. vanilla
2-3 Tbsp. butter

In a cereal bowl crack 2 eggs and beat for 30 seconds. Add the sugar and vanilla and blend well. Slowly pour in milk and beat until well blended.
Heat a skillet that has been lightly coated with a small amount of cooking oil on medium heat. Add a small pat of butter to the skillet and allow to melt. Dip sliced bread into egg batter, coating both sides and allow to drip off excess for a couple of seconds. Place coated bread slices in hot skillet. Lightly brown on one side...about a minute or so, depending on your heat source. Turn once and lightly brown on other side. Remove from pan, place on plate and cut into four long strips or can be cut up into small cubes for easy pick up. **Check the temperature before giving it to baby to make sure it is slightly warm to touch. Repeat process for next batch.
