Fresh, homemade waffles make breakfast
a special occasion. Freeze the extras to use
when time is short.

Ingredients

  • 2½cups unbleached, all-purpose flour
  • 3tablespoons yellow cornmeal
  • 2tablespoons granulated sugar
  • ½teaspoon baking soda
  • ¾teaspoon kosher salt
  • 2½cups buttermilk
  • 3large eggs
  • 1teaspoon pure vanilla extract
  • ¾cup vegetable oil

Preparation

  1. 1. Combine dry ingredients in a large mixing
  2. bowl; whisk until well blended. In either a
  3. large measuring cup or separate mixing bowl,
  4. combine the remaining ingredients and whisk
  5. to combine. Add the liquid ingredients to the
  6. dry and whisk until almost smooth (some
  7. lumps are OK).
  8. 2. Preheat the waffle maker to desired setting.
  9. 3. Pour a cup of batter onto the center of the
  10. bottom waffle plate. Close the waffle maker
  11. and turn clockwise to flip. Open the second
  12. waffle plate and add a cup of batter onto
  13. the center of that plate, close and turn
  14. clockwise to flip. When the waffles are ready,
  15. carefully open the waffle maker and remove
  16. baked waffle. Then turn and open the second
  17. waffle plate to remove the second waffle.
  18. Repeat with remaining batter.
  19. 4. For best results, serve immediately.
