All-in-one Breakfast Casserole

This is a casserole that is easy to prepare and quite different. The twist? Using hard boiled eggs and sweet potatoes! The flavors are amazing! You can make this with or without anything you like or don't like. Spice it up with some HOT peppers. Blanket it with gravy! You name it, it's just yummy! Make your sausage, bacon and hard boiled eggs ahead of time to speed up the process. :) ENJOY!




2 cup cooked and crumbled sage sausage 1 cup cooked and crumbled bacon 2-3 cups Mexican blend shredded cheese 1½ large freshly grated white yukon gold potatoes (should have 4 cups) ¾ medium freshly grated sweet potato (should have 2 cups) 8 jumbo eggs, boiled, peeled and mashed (should have 3 cups) 1 bunch scallions, diced 2 large Anaheim chili peppers (you can use hot peppers if you like) vegetable cooking oil and 2 tablespoons unsalted butter Optional: Depending on how many are served have one egg ready to fry and put on top of each serving.

Preheat oven at 350 degrees Spray your sheet pan, 9 x 13, with olive oil. You can use any brand or kind of spray, this is what I use. Peel and grade your potatoes, set aside. Cook your sausage and bacon, crumble and set aside. Boil your eggs, peel and smash. (Should be 2 cups) Diced your onions and peppers, set aside. Pan fry your white and sweet potatoes together in vegetable oil and 2 tablespoons unsalted butter. After they have browned and tender, place in your pan. In the same frying pan cook your onions and peppers until tender. Start layering up your ingredients: Potatoes cheese sausage eggs scallions & pepper mix Bacon top with more cheese Place in your preheated oven (350 degrees) for about 30 minutes or until all ingredients are hot and the cheese is melted. Let rest a few minutes then cut and place on your plates. Optional: top with a fried egg.
